“Ni hao” will work for you in China but there are still a lot of Cantonese speakers in Hong Kong. (At least I think, it’s different in Cantonese…)
Take lots of photos. Also, I think you’d enjoy Cheung Chau, a small car- less island of HK. It’s accessible via ferry.
